The bouquet is like a walk in the forest after a rain: moss, wet leaves, earth. Spice balances fruit: raspberry, clove, vanilla and black pepper. The wine is delicate yet intense. It finishes with red berries, chocolate and torrefaction
Serve with wild mushroom risotto, duck breast, grilled meat or semi hard cheeses.
TASTING AND FOOD PAIRING
The nose reveals a hint of subtle oak spice followed by small red berries and cassis. A hint of sous-bois –forest floor– is an element of this pinot noir’s growing complexity. On the palate, sweet but restrained fruit leads to ne tannins and a poised nish. This wine calls for earthy meals and meats high in avour. Duck con t and lamb ragout with root vegetables come to mind, though the wine has the nesse to complement halibut.
